Easy Pistachio Pie

This easy Pistachio


Ingredients
  • 8 oz cream cheese softened
  • 3.4 oz package pistachio Jell-O instant pudding mix
  • 20 oz can Dole crushed pineapple including juice
  • 1 cup miniature marshmallows
  • 8 oz container Cool Whip or 1 cup heavy whipping cream whipped to stiff peaks
  • prepared pie crust I used my Nilla Wafer Pie Crust, graham cracker crust would also work
Optional Toppings
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/2 cup chopped pistachios
  • maraschino cherries
Instructions
  1. In a large bowl, beat the cream cheese and pudding mix together until light and fluffy.
  2. Beat in crushed pineapple including juice.
  3. Stir in marshmallows.
  4. Fold in Cool Whip or whipped cream.
  5. Spoon filling into cooled pie crust and chill for at least two hours.
Optional Toppings
  1. Beat whipped cream and powdered sugar together until stiff peaks form.
  2. Pipe on to the top of the pie.
  3. Add maraschino cherries and sprinkle with chopped pistachios.
Recipe Notes
This is enough filling for a 9.5 inch pie plate. Extras can be enjoyed as a dessert salad.

In late 2012 I wrote a post about   2013 trends that I thought would have great staying power.  Several days ago I reread that post, and if I do say so myself I definitely hit the bullseye with my predictions. These are still going strong: simple geometric patterning  nature inspired motifs (birds, feathers, florals, plants, etc. ) lighter woods in furniture and  floors gold toned finishes  open walls in kitchens  backsplashes to the ceiling mixed colours in kitchen cabinets reclaimed/eco-friendly materials  In addition it seems that there are variations of these trends that will also have great staying power.   Consider: More geometric patterning  Not only will you see geometric patterning used on textiles and rugs, it has moved to furniture  and lighting as frameworks, overlays and inlays.  Sculptural light fixtures Yes,  still going strong and branching out a little from the  large scale, voluminous fixtures seen in 2014 to a whole new skeleton/wire look that will be big for 2015.   There are so many ways you can make your space inviting .  My recommendation today is to  consider wood because it can add both warmth and architectural interest to any space.  Choose a little or a lot, there's something for every space. If you don't  like the warm tones of wood but love the grain and texture, think about white washing or gray washing it.   How about using  wood  in...... Yes, there is an App for Blogger and here I am trying it out.  In the past I've wanted to compose posts on my I Pad when I was travelling and couldn't.  Last week I saw an ad and decided to give it a try.  This is an in process review. So far so good. The interface is simple , but so are the text options.   Can't do much that is fancy with just Bold  and Italics and underline.   Also clumsy when you have to select and apply these options.  Not to mention how I hate one finger pecking to compose! Let's try adding a photo from my camera roll.  You  have some options for photos with screen shots, actual photos taken with I Pad or downloaded  from camera. When you read the reviews they are less than stellar with a long list of complaints.  My take: Can't include video or links, can't add photo captions or photo properties.  Nowhere to add label tags. So much for basic SEO.   So..... Good for a short,  simple post with photos while you are on the fly.  I am wonderin
